Halloween weekend we had our family friends come stay with us. Emily brought this fabulous orzo salad that I just couldn’t get enough of. While we were getting pedicures you told me all the steps and ingredients to make this orzo salad. That Sunday night I immediately hit Trader Joe’s to purchase everything. It is very quick to make. Highly suggest getting the orange cranberries and feta from Trader Joe’s but the rest you can find in any grocery store.

Ingredients
- 1 pound Orzo cooked, drained
- 7 ounce Bag of arugula chopped
- 3 ounces Crumbled feta cheese with Mediterranean Herbs or the Isreal pasture feta cheese sheeps milk (yellow and green package, need to drain water, break it up and use about half container. About $8 per container
- 1 cup Dried cranberries – orange flavored cranberries
- 20 leaves fresh basil leaves chopped
- 1/3 cup olive oil (to taste)
- salt and pepper (to taste)

Instructions
- Bring pot of water to a boil. Toss in box of orzo and boil for about 9 minutes until al dente. Drain the water, rinse with cold water until pasta is cold.
- Add orzo to big bowl when pasta is cold. Sprinkle in Olive oil salt and pepper to taste.
- Rough chop the arugula four times each way and fresh Chop basil In the large bowl add in greens, feta, and orange flavored cranberries.
- Additional Salt/pepper/olive oil to taste if need be. Feeds 10-15 people. Lasts about one week. Perfect for potlucks. Can get all ingredients from Trader Joe’s.
