Directions:
– 1-2 days prior, mix together the ground beef, eggs, liquid smoke, and ¾ of BBQ sauce (save the remaining ¼ for topping). Refrigerate until ready to bake.
– Crumble the sleeve of crackers before opening the package with your fingers until fully mashed.
– Dump the sleeve of crumbled crackers into the meatloaf bowl and mix all together.
– Mold the meatloaf into a half round in the pie pan.
– Bake on 350 for 1 hour covered with foil (keep an eye out, all ovens are different).
– Remove meatloaf and drain off the oil. Leave off foil.
– Continue to bake for an additional 20 minutes.
– Turn oven to Broil and spread the remaining BBQ sauce on the top of the meatloaf. Broil it until the BBQ sauce gets crispy (about 5-10 minutes).
– Remove meatloaf and drain access grease.
– Serve with your favorite mashed potatoes, gravy, and rolls/butter. We used Hawaiian rolls and toasted them when the meatloaf was on broil.
– Perfect for a cold winter night. The leftovers are delicious on a sandwich or just reheated.
Ingredients for mashed potatoes:
– 5 pound bag of potatoes. We used Russet.
– 1 stick of butter
– ¼ cup of mayonnaise
– ½ cup of milk
– Your favorite garlic seasoning
– 1 jar of Turkey gravy (Boston Market has the best)
– Salt & Pepper
Directions:
– Boil a pot of water with a few sprinkles of salt
– Remove half the skin from each potato and cut into cubes
– Place potatoes in the boiling water until soft
– Heat the jar of gravy in a separate pan
– Drain all the water
– Add butter, mayonnaise, and milk to the potatoes and mash until creamy
– Add garlic powder, salt and pepper to your liking. Sprinkle paprika and parsley for prettiness.
