I wanted to make something special for my dear friend Kim's birthday. I private messaged her mom on Facebook and asked what would be a good dessert to take to Kim's house. Apple Crisp it is! Crispy oat crumble and cinnamon spiced granny smith apples baked to perfection. Serve hot out of the oven over vanilla bean ice cream. This recipe will make two 9" apple crisp pies.

Ingredients
Apple pie
Oat Crumble Topping

Instructions
  1. Gather all ingredients on the counter prior to prepping your pies.
  2. Preheat oven to 350 degrees F (175 degrees C). Peel your apples.
  3. Core and slice your apples.
  4. Split your apples slices in half and place into two 9" pie dishes. Mix the white sugar, 1 tablespoon of flour, and ground cinnamon together.
  5. Sprinkle the mixture over the apples. Adding 1/4 cup of water evening over all the apples in both dishes.
  6. Combine the oats, 2 cups flour, 2 cups brown sugar, baking powder, baking soda, melted butter, and nutmeg.
  7. Crumble evenly using your hands over both apple pies.
  8. Bake at 350 degrees for about 45 minutes or until the oat crumble is crispy and browned.
  9. Pull apple crisps out of the oven and let them sit for 5 minutes. Scoop or slice apple crisp into bowls and server with your favorite vanilla bean ice cream.
