I took some time off from Crossfit. #1 because I was pregnant and #2 because I found out I had bulging discs on my spine. Not sure what from, but assume after all these years of random training: karate, cheerleading, softball, triathlons, Half Ironman, riding my bike in AIDS Lifecycle from San Francisco to L.A. in one week (545 miles), Crossfit, Bikram, crashing a few times on my dirt bike, and so on...that something didn't set well. With that said, I am mostly hiking these days and really miss the challenge of Crossfit. When my mother in law invited me to the annual Christmas party I couldn't show up empty handed. I miss all my old workout partners and decided to attend. YES, my mother in law is 65 and has been doing Crossfit for 2 years now. Very proud! When we arrived there was taco man, tons of appetizers, and many desserts. I must have had the healthiest dessert there. These are super yummy too. Easy to make and I dare you to only eat one.

Ingredients
- 1 cup almond meal
- 1 Tbsp. coconut flour
- 1/4 tsp. sea salt or fleur de sel
- 1/8 tsp. baking soda
- 1/4 tsp. ground cinnamon
- 3 Tbsp. coconut oil or butter melted
- 2 Tbsp. honey or maple syrup
- 1-1/2 tsp. vanilla
- 1/4 cup chopped dark chocolate more or less depending on your preference
Servings: cookies
Instructions
- Preheat the oven to 350 degrees.
- Stir in the coconut oil, honey, and vanilla. Stir in the chopped chocolate last. If it seems too dry, you can sprinkle a little water into the dough.
- Make into tablepoon sized balls baking for 8-10 minutes on a well-oiled or parchment paper lined cookie sheet (the edges should be golden).
- Let them sit on the pan for 5 minutes and then transfer to a wire rack to completely cool.
