Shrimp & Prosciutto Pasta

We had some leftover imported prosciutto from our New Year’s party last night and I wanted to find something creative to do with it. I instantly thought pasta as I figured my husband would want something with carbs and oil. When I searched the web for shrimp and prosciutto I stumbled upon this recipe...

Baked Honey Dijon Swai Fish

Swai fish is not the easiest fish to find. The first time I tried it was at The Heights in Upland but they only get it in once per year. I ran into this fish in the frozen section at Trader Joe’s last week. One bag of 3 really good sized Swai was $4.99. I bought it and figured if I didn’t like it then I wouldn’t purchase it again. I thawed two pieces and used this recipe. It was outstanding...

Maple Glazed Salmon

My husband does not like salmon but I sure do. The best part about this recipe is that it is quick and you can baste your salmon and through it in the oven while you prep other food. This came out lightly sweetened with just the right about of seasoning. You could still taste the fish but if gave a since of Hawaiian flare. It just needed some grilled pineapple. Next time!
Ingredients:
4 skin-on salmon fillet...

BBQ Bacon Wrapped Jalapeno & Cream Cheese Shrimp

DEEP FRY:

GRILL ON THE BBQ

For my birthday we headed to the local pub in Big Bear Lake called Murray’s Saloon & Eatery. Two guys were at the table next to use so we started chatting. They swore by the food menu. James ordered Ahi Tuna which was amazing and I ordered bacon wrapped shrimp. I put a reminder in my phone to recreate those bacon wrapped shrimp as soon as I got home.  I bought the largest sh...

Grilled Halibut With Garlic, White Wine & Butter Sauce

We were in Big Bear for the weekend and my husband ordered red snapper with garlic butter at the restaurant Saturday night. The server apologized, said they were out of snapper but they had halibut. He got it anyway. I felt bad that he didn’t get his snapper so I grilled up this delicious, succulent garlic white wine/butter sauce and made shrimp, halibut, and red snapper...

Grilled Tuna Sandwich

My Husband loves Tuna Melts. When I first started dating him I asked him if he would like a tuna melt for dinner. He asked what it was. He had only eaten tuna out of a can but never had a tuna melt in his life. Now they are one of his all time favorite things to eat.

Ingredients:
7 ounce can of Chicken of the Sea Albacore Tuna in Water (drained)
Mustard
Mayonnaise
Sourdough
Butter
Pepper

Coconut Fish Soup

I have a recipe for Tom Kha Gai that I plan on making very soon. Something about vegetables and coconut milk together is heaven! I love the Tom Kha Gai at Mu Restaurant in downtown Redlands. I gave this recipe a go last night. Originally I was going to do fish and veggies on kabobs and then made up this fish soup recipe and was so happy that I did. It’s very light, healthy, and a tad spicy which I love.
Ingre...
