Simple Bubble Guppies Birthday Cake

Simple Bubble Guppies Birthday Cake
Print Recipe
I wanted to make my daughter's birthday cake and wanted to make it very simple because the summer has been nearly 100 degrees every day. A couple months prior, I did some research on Pinterest and Ebay. Found an item on Ebay that had 12 Bubble Guppies pieces for $7.99 + $5.99 shipping/handling. Figured for $14 she could also play with the pieces later. You can research by: Nickelodeon Bubble Guppies Mini Figure Set of 12 w/ Gil, Molly, Bubble Puppy. You can make this cake as simple as you'd like. In one large dish, 1-3 tier, only frosting, etc. By the time you purchase your decorations and ingredients you are probably looking at a $20-$25 spend depending on the deals/coupons you use. Get creative and have fun!

Instructions
Cake
  1. Using 3 cake pans (9 inch rounds), spray with cooking spray or line with parchment paper circles to help the cake come out easier.
  2. Mix your cake mix with the water, eggs, and butter for 1 minute on low speed and about 3 minutes on medium speed. Pour batter evenly among the 3 cake pans.
  3. Bake in the oven at 350 for 18-22 minutes. Don't overcook. You want the cakes to be moist. Allow the cakes to cool and then stick them in the freezer for 2 hours or overnight.
Cream Cheese Frosting
  1. In a large mixing bowl, combine all the ingredients and mix until smooth. I start with the butter and cream cheese, toss in the vanilla, and then add the powdered sugar using a hand mixer.
  2. Use a few drops of blue food coloring gel and add to a cup of cream cheese frosting if you want to make the top of the cake blue.
Mirror Glaze Piping Gel
  1. Add a few drops of blue food coloring gel to the Mirror Glaze Piping Gel to decorate the top of your cake. This gives it a shiny ocean look. Optional of course. I found the glaze at The CakeWalk in Upland, California.
Layering your cake
  1. Remove your cakes from the freezer and let sit on the counter for 10 minutes. On a large plate or cake stand, use a spatula and carefully remove one cake from the cake pan. Flip it upside down. Spread a half cup of cream cheese frosting on top.
  2. Add your 2nd cake, adding another half cup of cream cheese frosting and then add your last cake on the top, spreading cream cheese frosting all over the sides covering any visibility to the cake.
  3. Spread regular cream cheese frosting, blue cream cheese frosting, or blue mirror glaze on the very top of your cake.
Decorating
  1. Optional: Throw graham cracker crumbs on the sides of your cake to give it a dirt look.
  2. Place your figurines on top and candles.
  3. Chill in the fridge until ready to enjoy.
