While reading the article in the May 2015 Tasting Panel magazine, I decided to attempt this watermelon mojito for Mother's Day. It sounded refreshing and I already had the ingredients at home. I immediately clipped fresh mint leaves from my backyard and made the simple syrup and honey water from scratch. You can leave out the rum if you want to make it non-alcoholic. Ingredients

Instructions
  1. Lay everything on the counter.
  2. Make the simple syrup. 1/4 cup of sugar and 1/4 cup of water. Mix completely and set aside.
  3. Make the clover honey water. 1/4 cup of clover honey and 1/4 cup of water. Mix completely and set aside.
  4. Blend up one cup of watermelon in a blender or Nutribullet. You only need 1 oz. but you can add extra if you want to sweeten it up.
  5. Add all ingredients to a shaker: 3 oz. rum, 2 oz. lime juice, 1 oz. clover honey water, 1 oz. simple syrup, 1 oz. watermelon puree, and 1 oz. club soda. Shake and pour evenly over two glasses of ice.
  6. Serve at your next party, poolside, or prep in advance and take it camping.
  7. Garnish with watermelon slices, lime slices, and mint leaves. I liked floating a few mint leaves in the cocktail.
