Boston Market Sweet Potato Casserole Copycat Recipe

You’ve got to love Pinterest. I don’t get on it often but when I’m winding down right before bed, I just poke around for a few minutes. Thankfully the week of Thanksgiving I stumbled upon this recipe for Boston Market’s copycat sweet potato casserole. In our Italian family we are not ones to have much beyond the meat, potatoes, rolls, and dessert. This would be the first year in 8 years that we have enjoyed anything vegetable related. My sister in law made the best asparagus, my mother in law made a corn soufflé, and I made this potato casserole. I decided to make it two days prior to make sure it tasted good enough. It passed the test so I made it on Thanksgiving. If you like this sort of side dish, then you will want to make one for your family. It was the perfect amount of sweetness. I could have eaten the entire dish. The first time I used large marshmellows and only did half of the recipe in case I didn't like it. The second time I used the mini marshmellows and a full recipe. You want to use the mini marshmellows.

Instructions
  1. Set out all your ingredients
  2. Peel your sweet potatoes
  3. Fill a large pot with sweet potato pieces and water. Bring to a boil over high heat. Cook until fork tender.
  4. Drain potatoes and place back into pot.
  5. Mash potatoes with a potato masher or blend with an electric mixer, until mostly smooth.
  6. Add remaining ingredients (except topping ingredients). Mix until combined. Preheat oven to 350°F. Grease an 8”x10” casserole dish (8x8 or 9x9 works too). Spoon sweet potatoes into casserole dish and smooth out. Sprinkle top of sweet potatoes with marshmallows.
  7. Melt butter in a medium microwave safe bowl. Add remaining ingredients. Mix with a fork. Sprinkle over top of casserole.
  8. Bake for 20­25 minutes until streusel is crisp and marshmallows are golden brown.
  9. Serve and enjoy!
