Coconut Cream Pie

A couple weeks ago I stumbled upon the cutest antique store in Palm Desert. I found an old vintage picnic basket sort of like Little Red Riding hood that you can carry around a pie in. Pie Dough Pie Crust

Ingredients:

1 1/4 cups all-purpose flour

1 stick of cold butter, cubed (If you use unsalted butter, add a pinch of salt)

1/4 cup ice water

Directions:

In a food processor, pulse the flour and salt

Add the cubed butter and pulse until dough is pea sized

Ingredients:

1/3 cup melted unsalted butter

1 1/2 cups graham cracker crumbs or 10-12 whole graham crackers (place whole crackers in re-sealable plastic bag, close, and use rolling pin or mallot to crush)
