Paleo Shepherd’s Pie

With Butternut Squash Mash in the middle:
Intriguing enough…when I did the Half Ironman a couple summers ago in Calgary, Canada we were given gift bags. Inside the gift bag was Impact Magazine the July/August 2011 edition. I saw this recipe for Mammothherd’s pie and kept the magazine to one day attempt it. Let’s just say I loved it so much I made it twice in one week...

P.F. Chang’s Chicken Lettuce Wraps

While dining at our local P.F. Chang’s my mother in law wanted to get the chicken lettuce wraps for an appetizer. We both dove into them and nearly licked the plate clean. She wondered how we could get the recipe so I immediately went home to start the research. The very next day I was at Super King Market and Albertson’s stocking up on some ingredients that I didn’t have in my cupboard...

I found this recipe on the Wolfgang Puck website. You can prepare the sauce hours prior or even the night before to save you time. The sauce reminds me of bruschetta sauce. You can use this sauce on chicken or shrimp as well.
  • 4 large, firm, ripe organic tomatoes, peeled, seeded, and finely chopped
  • 2 shallots, minced
  • 1 bunch fresh organic basil leaves, chopped (about 2/3 cup)
  • Grated zest ...

Milanesa Beef Chicken or Veal

My husband loves Milanesa. I have made this twice. Once with chicken and once with flat steak. They both came out fantastic. I have not tried it with the pasta and sauce but I’m sure it’s just as good. You can also use veal instead of chicken or beef. For vegetarians, maybe try eggplant. If you live in Southern California you can find something similar at Inka Trails in Claremont, CA or Coco Palm in Pomona, CA...

  • 2 pounds flank or skirt steak, trimmed of excess fat

Lighter Chicken Pot Pie

A handful of tweaks turn this comfort food into a smarter choice: white-meat chicken (not dark), extra veggies, low-fat milk in the filling, and a lighter crust. Brushing the phyllo with just a small amount of oil instead of butter makes it just as tasty.
