Apple Bacon Coleslaw

This is by far one of the best coleslaws I have ever had. A perfect mix of sweet, salty, and tangy! When you are looking for a fun side dish or item to bring to a potluck… this is a great option!

Ingredients:
1/4 cup cider vinegar
1 cup mayonnaise
1/3 cup honey
2 teaspoons kosher salt
1/4 cup pulp free orange juice
Juice from 1/2 fresh lemon=roughly 2 tablespoons of lemon juice
1 teaspoon ground black pepper
1 small Fennel (sweet anise) found in produce section, shredded, I used about 2 tablespoons
1 medium cabbage, cored, shredded
1/2 pack of bacon fried crispy then broken up into small pieces
1 bunch scallions, thinly slice
4 firm apples, peeled, cored and shredded
1/2 cup finely minced parsley leaves, optional
 
Directions:
In one large bowl combine the fennel, cabbage, bacon, and scallions.
In another bowl whisk together everything else.
Mix both bowls together completely.
Serve immediately or if you can resist, let the bowl sit in the fridge overnight. This is always better if you let it sit for a day or so…really lets the flavors out.
