Beef Con Queso

Since I was a little girl, my mom made this for our family minus the beef. I finally called my amazing mom whom is a truck driver. 🙂 She’s RAD! to ask how I should make her cheese dip. She responded with one block of Velvetta, one jar of Pace Picante HOT, and some milk. My husband loves Chili’s restaurant, so that’s where I got the beef addition.

Ingredients:

– 1 block of Velvetta 2% Milk (32oz. found at your local supermarket)
– 1 jar of Pace Picante sauce – Hot or 1 can of ROTEL (tomato & chiles) – Thanks Case for the idea!
– 1/2 cup of Milk
– 1 pound of ground beef
– 1/2 packet of HOT or traditional taco seasoning

Directions:

Place beef into pan and cook until browned. Add 1/2 packet of taco seasoning to meat.

Cut Velvetta into cubes and lay in the pan with beef on low

Add milk and 1/2 the jar of salsa or ROTEL, constantly stir until melted. Only use half jar for spicy and full jar for regular salsa.
Keep hot on stove or pour the cheese dip into a crock pot and cook on low

Serve with your favorite tortilla chips!
