Summer Salad

*** You can get the majority of these ingredients from your local supermarket or farmers market.


3 large bell peppers – I use (1) yellow, (1) red, and (1) orange and cut into 1/2 inch pieces

3-5 mini cucumbers or (1) large cucumber and slice into rounds or cubes

1/4 red onion, diced

1/3 cup of fresh cilantro

4-5 Roma tomatoes, diced

Salt & Pepper to taste

Optional: Squeeze of Lime, squeeze of Lemon, or splash of virgin olive oil


Place all diced veggies into large tupperware and add salt/pepper to your taste. This will last 2 people one whole week.

Enjoy as your side dish or on top of your favorite fish or chicken dishes.

*** Super easy, fresh, and delicous. Perfect for summer and adding on top of fish, chicken, or tacos.
