Andes Mint Cookies

Perfect round balls or spoonsfuls? I like the left one’s better…

INGREDIENTS:

1 box = 18.25 oz. Box Devil’s Food Cake Mix – I use Pillsbury Devil’s Food Moist Supreme

1/2 cup vegetable oil


2 eggs


1 packaged box of Andes Mints = 4.67 oz. and 28 wrapped pieces – if you can only find the bag of them, you can break them in half


DIRECTIONS:

Mix the box of cake mix, oil, and eggs together. Drop spoonfuls of dough onto baking sheet or make into perfect tiny balls about tablespoon sized. 

Bake at 350 degrees for 6-9 minutes. Don’t cook any longer than that! I took mine out after 8 minute, they were still a little undercooked, but they continue to cook on the pan when you bring them out.
 
Take sheet out of oven and while the cookies are still on the pan and very hot, place an Andes Mint on top of each cookie.
 
In about 5 minutes, the mint will be melted. Take a spoon and smooth out each mint like frosting.

Enjoy these warm with a glass of milk. Fun for the kids!
