Drums of Fire – Hot Wings

INGREDIENTS FOR THE MEAT:
1.5 – 2 pounds Foster Farms Chicken Drumsticks

INGREDIENTS FOR THE MARINADE:

1 tablespoon of La Costena Chipotle Peppers in Adobo Sauce (blend until smooth) Use more if you like EXTRA Spicy! You can use Curry paste if you don’t like Chipotle peppers. This can be found in pretty much any supermarket.

2 tablespoons soy sauce

2 tablespoons toasted sesame seeds

1 tablespoon toasted sesame oil

1 tablespoon sugar

1/4 cup green onions, finely chopped

4 large garlic cloves, minced

1/4 teaspoon salt

1/8 teaspoon pepper

Ranch or Blue Cheese Dressing

DIRECTIONS

1. Remove skin from chicken drums. Score meat on both sides by making shallow diagonal cuts about 1 inch /2.50cm apart.

2. In a large mixing bowl stir together chipotle peppers, soy sauce, sesame seeds, sesame oil, sugar, green onions, garlic, salt and pepper.
3. Pour into a plastic bag; add chicken drums. Seal bag; turn bag to coat chicken.
4. Marinate in the refrigerator for 1 to 4 hours, turning bag occasionally.
5. Remove chicken, scraping off excess marinade. SAVE the marinade.
6. Place chicken on the grill of an uncovered barbecue. Grill directly over medium coals for 15 minutes on one side.
7. Turn chicken over and grill for 10 to 15 minutes more on the other side.
8. Baste both sides using the reserved marinade with a brush and grill for 4-6 minutes more, or until chicken is tender and no pink remains.
9. Discard any remaining marinade.


10. Serve with ranch, blue cheese, or both for dipping. Of course sides of celery sticks is a nice touch.

These are perfect for Super Bowl Sunday!
